Ingredients
Scale
- 1 ½ cups graham cracker crumbs
- ⅓ cup granulated sugar
- ⅓ cup unsalted butter, melted
- 1 package (16 oz) chocolate chip cookie dough (or homemade dough)
- 1 cup milk chocolate chips (or your choice of chocolate)
- 24 mini marshmallows
- 1 tablespoon butter (for greasing the muffin tin)
Ingredient Highlights
- Graham Cracker Crumbs: The graham cracker crust provides the signature flavor of s’mores and acts as a base for the cookie cups.
- Chocolate Chips: The milk chocolate chips offer the perfect sweetness and gooeyness when melted, giving these cookie cups a rich, indulgent filling.
- Mini Marshmallows: The toasted mini marshmallows give that classic s’mores texture and sweetness, completing the flavor profile.
Instructions
Prepare the Cookie Cups:
- Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a mini muffin tin with butter or cooking spray to prevent sticking.
- Make the Graham Cracker Crust: In a medium bowl, mix together the graham cracker crumbs, sugar, and melted butter until well combined.
- Press the Crust into the Tin: Press about 1 tablespoon of the graham cracker mixture into each muffin cup. Use the back of a spoon to press it down firmly, creating a base for the cookie cups.
- Add the Cookie Dough: Scoop about 1 tablespoon of chocolate chip cookie dough on top of each graham cracker crust. Flatten the dough slightly with your fingers or the back of a spoon.
- Bake the Cookie Cups: Bake the cookie cups in the preheated oven for 10-12 minutes, or until the cookie dough is golden and cooked through but slightly soft in the center.
- Add the Chocolate Chips: As soon as the cookie cups come out of the oven, press a few chocolate chips into the center of each one, allowing the chocolate to melt.
- Toast the Marshmallows: Place a mini marshmallow on top of each chocolate-filled cookie cup. Return the tin to the oven for an additional 2-3 minutes, just until the marshmallows are puffed and lightly toasted.
- Cool: Let the mini s’mores cookie cups cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
