With minimal prep and cooking time, this meal is perfect for busy weeknights when you need something delicious on the table fast.

Ingredients

Scale
  • 2 packs instant ramen noodles (discard seasoning packets)
  • 2 boneless, skinless chicken breasts, thinly sliced
  • 2 tablespoons vegetable oil (or sesame oil for extra flavor)
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 2 green onions, chopped (for garnish)
  • 1 tablespoon sesame seeds (optional, for garnish)

Sauce Ingredients:

  • ¼ cup soy sauce (low-sodium recommended)
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon honey or brown sugar
  • 1 teaspoon sriracha (optional, for heat)
  • 1 teaspoon rice vinegar
  • 1 teaspoon sesame oil
  • ½ cup chicken broth or water
  • 1 teaspoon cornstarch (to thicken the sauce)

Ingredient Highlights

  • Ramen Noodles: The perfect quick-cooking base for this dish, soaking up all the delicious sauce.
  • Chicken Breast: Lean protein that cooks quickly and remains tender when stir-fried.
  • Broccoli & Bell Pepper: Adds color, crunch, and a boost of nutrients.
  • Soy Sauce & Oyster Sauce: The backbone of the savory sauce, providing rich umami flavor.
  • Sesame Oil & Garlic: Adds depth and fragrance to the dish.

Instructions

Prepare the Ingredients:

  1. Cook the Ramen Noodles:

    • Bring a pot of water to a boil.
    • Add the ramen noodles and cook for 2 minutes (slightly undercooked, as they will finish cooking in the stir-fry).
    • Drain and rinse with cold water to prevent sticking. Set aside.
  2. Prepare the Sauce:

    • In a small bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, honey, sriracha, rice vinegar, sesame oil, chicken broth, and cornstarch.
    • Set aside.

Cook the Stir Fry:

  1. Sauté the Chicken:

    • Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat.
    • Add the sliced chicken and cook for 4-5 minutes until golden brown and fully cooked.
    • Remove from the pan and set aside.
  2. Cook the Vegetables:

    • In the same pan, add the remaining 1 tablespoon of oil.
    • Stir-fry the broccoli, bell pepper, and carrot for 3-4 minutes until slightly tender but still crisp.
    • Add the minced garlic and grated ginger, cooking for another 30 seconds until fragrant.
  3. Combine Everything:

    • Return the cooked chicken to the pan with the vegetables.
    • Add the cooked ramen noodles and pour the sauce over everything.
    • Toss well to coat the noodles evenly and cook for 1-2 minutes until the sauce thickens slightly.
  4. Garnish and Serve:

    • Sprinkle with chopped green onions and sesame seeds before serving.
    • Enjoy hot!
