1. Prepare the Rice: Rinse 1 cup of basmati rice under cold water until the water runs clear. In a medium pot, combine the rinsed rice with 2 cups of chicken broth. Bring to a boil, then reduce the heat to low. Cover and let it simmer for about 15-20 minutes or until the rice is tender and the liquid is absorbed.
2. Cook the Chicken: While the rice is cooking, heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and black pepper.
